Between Shifts

Torluk is how charcoal has been made in Anatolia for generations, oak wood stacked by hand into a dome, sealed under leaves and packed earth so it burns starved of air instead of fed by it. Too much oxygen and the wood turns to ash. Too little and it never converts at all. Getting it right takes an eye that only comes from doing it wrong a few times first. Once it's lit, the mound has to be watched for days, not hours. Someone checks the vents through the night, reading the smoke like a language, white steam, then yellow smoke, then finally a thin blue haze that means the wood has become something else. Get the timing wrong and days of work turn back into nothing. Out of a large stack of oak, only a fraction comes out as usable coal. The rest is smoke, sweat, and the discipline of staying close to a fire for as long as it takes. This is what "between shifts" really means here. Not a break. Just the part of the work where nothing looks like it's happening.
